Avocado Spinach Pasta Sauce
Creamy without cream. This sauce gets its texture entirely from avocado and a little Greek yogurt, blended smooth in MyBlend Compact with fresh spinach. It tastes bright and rich at the same time. Make it fast and eat it right away before the avocado loses its freshness.
Ingredients
- 1 small ripe avocado, approx 120 ml
- 50 ml fresh spinach
- 50 ml Greek yogurt
- 50 ml pasta water
- 1 tsp lemon juice
- ½ garlic clove
- Salt and black pepper
Instructions
- Add all ingredients to MyBlend Compact.
- Blend until completely smooth.
- Toss with hot pasta and serve immediately.
Tip: Avocado browns quickly once cut. Make this sauce just before serving and eat it straight away for the best colour and taste.
